Bishop fremstilles 100% af Shiraz fra 35 og 120 år gamle vinstokke plantet i det eksklusive Ebenezer-distrikt i Barossa Valley. Vinen er lagret 16 måneder fortrinsvis på fade af fransk eg. Duften byder på klingende rene toner af blåbær og solbær med et let strejf af mørk chokolade og vanille. Smagen er kraftfuld og meget koncentreret, og eftersmagen er meget, meget lang.
